I make and sell wearable art - made using my own illustrations - and take part in markets and events. It’s something that I truly love. Tumblr (3.0; @hungrydesigns)http://blog.hungrydesigns.com/<img src="http://26.media.tumblr.com/tumblr_lzjcbpSAQy1qbgm7to1_500.jpg"/><br/><br/><p><strong>Sweet Potato Pie Recipe</strong></p> <p>I’ve always wanted to bake a sweet potato pie - it’s been on my baking bucket list for a while and this afternoon I tried my hand at making one.  I was surprised how easy it was to bake and prepare and so glad it was as delicious as I had imagined!  Here’s the recipe I followed (although I added a little bit here and there…!).</p> <p>You will need:</p> <ul><li>3 medium sweet potatoes (about 700 grams)</li> <li>1 cup of sugar</li> <li>1/2 cup of butter</li> <li>2 large eggs</li> <li>1/2 cup of milk</li> <li>1 tablespoon vanilla essence </li> <li>1/2 teaspoon of nutmeg</li> <li>1/2 teaspoon of cinnamon </li> <li>1/2 teaspoon of ginger</li> <li>Icing sugar to dust</li> <li>9” pie pan</li> <li>4 puff pastry sheets</li> </ul><p>Put your sweet potato (whole with the skins on) in a pot filled with hot water and boil.  Boil until they are soft (about 40 mins).  Take the sweet potato off the hob and run cold over them.  When they are cool enough you can peel the skin off - this should come off easily with your hands.  Be careful though - the potatoes are hot and I don’t want you to burn yourself!  Mash the potato up until smooth and set to one side.  </p> <p>Butter your pie pan.  Cut your puff pastry to size and line your pie pan - I folded my pastry around the edges with a ribbon effect.  Break your eggs in a small bowl and brush the edges of your pastry.  </p> <p>Add butter to your potatoes and mix well.  Next add the sugar, mixing well.  Then add you milk, eggs, nutmeg, cinnamon and ginger, mixing well after each additional ingredient is added to the bowl.  Pour the contents into your lined pie pan, being careful not to overfill.  Your potato will rise slightly and you don’t want it to pour out over the sides!  </p> <p>Pop your pie pan in a preheated oven at 175 degrees and leave to bake for 40 mins.  Remember the potato will puff up so don’t be alarmed!  It will then sink when the pie has cooled.  After 40 mins check to see if the center is cooked by sticking a knife in the center - if it comes out clean it’s cooked, if it doesn’t come out clean pop it back in for another 5 mins or until cooked thoroughly. </p> <p>Lift the pie out and leave to cool on a wire rack (do not turn upside down).  When cool, dust lightly with icing sugar.  Serve with whipped cream and enjoy!</p>http://blog.hungrydesigns.com/post/17761595632http://blog.hungrydesigns.com/post/17761595632Fri, 17 Feb 2012 21:38:13 +1000sweet potato piehungry designspierecipesweet potato<img src="http://27.media.tumblr.com/tumblr_lzj2wzk1sI1qbgm7to1_500.jpg"/><br/><br/><p>My first homemade sweet potato pie.
